Ostara Quiche! Broccoli, Mushroom, and ham with cheese!
It looked yummy, so I had to share…can’t wait to dye the eggshells later!
RECIPE
Crust:
Mix 1 cup flour with 1/2 teaspoon salt. Add to food processor. Mix 1/4 cup olive oil with 1/4 cup water. Add to flour in food processor. Blend until dough forms. Press into 9 inch pie plate. Refrigerate until ready to use, and then rub some soft butter onto the crust. Poke the bottom of the crust with a fork to prevent bubbling.
Filling:
Melt 2 tbsp butter in frying pan and cook filling (in this case, broccoli, mushroom, and ham) until desired consistency is reached. I used one small head of broccoli and about 4 ounces of sliced mushrooms. I also added about a teaspoon of garlic for flavor.
Beat 6 eggs with some salt and pepper.
Put filling in pie crust. Top with cheese. Pour egg mixture over filling.
Bake at 350 degrees for 25-30 minutes, until a knife inserted into the center comes out clean.
